A crusade can be called by the Pope or the orthodox leader, and all CATHOLIC countries are required to join, unless its against a fellow CHRISTIAN (not just catholic) country then its just optional. Religions: Pagan (Hungary, and Kieven Rus) Muslim (Muslim africa and Muslim Spain) (christian) Orthodox (ottonam empire) (christian) Catholic (all except those specified) You can convert a country 2 days after a takeover. You personally can convert but then it will take you 5 days to convert.
