The Chinese Sichuan "Zhong" Dumplings, named after their inventor Zhong Shaobai (钟少白), date back to the late Qing Dynasty in the early 1900s. Shaobai was a skilled chef in Chengdu, Sichuan Province, and he came up with this unique dumpling dish highlighting a spicy, sweet, and salty sauce that sets it apart from other dumplings.
