The Legend of Zelda series has, almost undoubtedly, one of the greatest collection of OSTs in video game history. There are some that are instant classics, like the main theme of the series itself, and there are some underappreciated songs that really deserve some love. In my opinion, (one of) the most underrated is the Flight Training theme from The Legend of Zelda: Skyward Sword. It is such a banger and is overshadowed by other, more popular tracks such as the Ballad of the Goddess.
