When the opponent has a red star on them, it means they are about to use a combo. You can intercept attacks by attacking when the opponent attacks, but you have to be quick. If you can't block a combo, you can try to block one attack, then intercept the next one. It'll stop the combo and you might not even be hurt that much. Use Play Now mode to practice fighting higher ranked opponents so you don't have to try multiple times in League mode. Ask me in the comments if you need help or have a question.
