Use the sliders to change the values of the Hue, Saturation, and Value components of the color. Optionally, you can also click on one of the preset colors on the right of the screen. You can also set a value to exactly something by using the accurate set button. You can read those values above the button above the sliders. You can also click the HSV/RGB button to change the sliders to Red/Green/Blue instead of Hue/Saturation/Value. You can also click the button again to change it back. In the top and top-right you can see the color's hex code and CMYK Color values.
Trivia: The opacity is just negative transparency. The CMYK color values are used quite often in printers, as they use pigments, which are just the opposite of light, as those pigments determine what lights they are absorbing. The Brescian Blue color would have been called "Cornflower Blue" before I searched up its hex code on Google.
