Instead of the standard 12 notes in a keyboard, the octave is split into 31 notes, which gives you a whole lot more musical 'colors' to work with. Intervals that exist in 31edo but not 12edo include: the subminor third, the supermajor third, the septimal seventh, and a lot more variants. Just play around and see if you can create major and minor chords with it.
