[Recipe #1] Egusi Soup: Duration: 20 mins If you are wondering what this is, this is a recipe for Nigerian Egusi Soup (Melon Seed Soup) is made with ground melon seeds, leafy greens, assorted meats, and seafood. It is traditionally served with "swallow" dishes like pounded yam, or fufu. Ingredients: 2 cups Egusi (melon) seeds, grinded. 1–1.5 lbs Assorted meat (beef, goat meat, tripe/shaki, cow leg) 1 cup Palm oil 1-2 cups Stockfish, cod, salmon, and/or smoked fish (deboned) 3-4 tbsp Ground crayfish or lobster 1 large Onion, chopped (divided) 3-4 habanero peppers, blended 1-2 Red bell peppers, blended (optional for color) 3 cups Chopped leafy greens (pumpkin leaves, spinach, thinly diced cabbage, or bitter leaf) 2-3 Seasoning cubes (Maggi, black pepper corn, or salt cubes) 1 tsp Okra - optional, for authentic flavor Instructions: Prepare the Ingredients: Blend the Scotch bonnet peppers, bell peppers, and half of the onion until smooth. Grind the egusi seeds into a fine powder (if not pre-ground). Wash and cut your leafy greens. Mix the ground egusi with a little water and some diced onions to form a thick, creamy paste. Cook the Meat: Season the meat with salt, chopped onions, and seasoning cubes. Steam in its own juices for 5–10 minutes before adding water to cook until tender. Add the smoked fish, then simmer for another 5–10 minutes. Remove the meats and set aside, reserving the stock. Prepare the Egusi Base: Heat the palm oil in a large pot over medium heat. Add the remaining diced onions (and locust beans, if using) and sauté for 1-2 minutes. Add the blended pepper mix and fry for 5 minutes until the oil starts to float on top. Add the egusi paste in small chunks to the oil/pepper mix. Do not stir immediately; let it cook for about 7–10 minutes to form lumps. Combine and Simmer: Gently stir the fried egusi, then add the reserved meat stock. Add the cooked meats, smoked fish, and ground crayfish. Add more water if the soup is too thick. Cover and simmer on low heat for 15–20 minutes, stirring occasionally to prevent burning. Add Vegetables: Stir in the chopped spinach or bitter leaves. Cook for an additional 3–5 minutes until the leaves are wilted. Taste and adjust for salt and seasoning. Tips for Success Avoid Bitterness: Do not fry the egusi for too long at too high a temperature, as this can make the soup bitter. Consistency: The soup should be thick, but you can adjust it with more stock or water based on preference. Oil Amount: Egusi produces its own oil, so adjust the palm oil to avoid a greasy soup. Alternative: If you can't find egusi seeds, pumpkin seeds can be substituted ------------------------- [Recipe ] Tteokkbokki: I feel like ppl would like this one so here is a tutorial: Prep the Rice Cakes: Soak 300-400g of frozen or refrigerated rice cakes in warm water for 10-15 minutes to soften. If using fresh, soft rice cakes, you can skip this step. Prepare the Sauce: In a small bowl, mix 2-3 tbsp gochujang (Korean chili paste), 1-2 tbsp gochugaru (chili flakes), 1 tbsp soy sauce, 1 tbsp sugar (or honey), and 1-2 tsp minced garlic. Boil the Stock: Bring 2-3 cups of anchovy broth (or water/chicken broth) to a boil in a shallow pan or wok over medium-high heat. Cook Components: Add the mixed sauce to the boiling broth, stirring until dissolved. Add the drained rice cakes, along with 2-3 sliced fish cakes (eomuk) and sliced onions or cabbage if desired. Simmer and Thicken: Reduce heat to medium and cook for 5-10 minutes, stirring occasionally to prevent sticking, until the rice cakes are tender and the sauce has thickened to a glossy, gravy-like consistency.
