Nicoise salads have infiltrated menus around the world, but they were created in Nice. The classic salad includes anchovies, shallots, red peppers, and other vegetables. Tuna and potatoes were added later, but are a yummy addition! La Socca is to be enjoyed with a glass of the region’s red wine. This Nicois snack is similar to a crispy, salty pancake served with a helping of black pepper. Be sure to order a large one to share with friends for the full experience. Farcis takes some of Nice’s regional vegetables (tomatoes, eggplants, and succhini), hollows them out and fills them with savory meats, garlic, and bread crumbs. It’s great way to sample some of the local Mediterranean flavors. Les Beignets de Fleurs de Courgettes are as beautiful as they are tasty. A unique dish to the Nice area, courgette flower blooms are lightly battered and fried before serving.
