Everytime you click the big cookie, the amount of cookies you have will double. Hold space and move your mouse over the cookies to sell them. You start with one cookie (the big one) that cannot be sold, otherwise you would have no way to get more cookies. Money does not have a purpose just yet, if you have any ideas for that let me know. So it turns out that 301 is the maximum number of cookies you can have before selling any, unfortunately.
