TO change the text, click remix, see inside, then go to "Sprites" and it is the one that says "Intro go here" click that, go to costumes, scroll all the way to the 298, and 299th costume, and change the text to whatever you desire. Please make sure to give credit, if you do not, your project will be take down by Scratch.
