To see all mixable characters, click the 'compatible girls' and 'compatible boys' drop-down menus. If a name is green, it means you can mix them with the character you have currently selected. Not all combinations work. I have no idea why, but after creating a blend, you have to click the green flag twice before the result characters go away. Sorry about that.
