To use a shield, hold s while having a shield in your 9th hotbar slot (also where you put a totem, a totem only works when it's in hotbar slot 9). This makes you immune to attacks, and disallows skeletons and creepers to shoot and explode because I don't know where the scripts for projectile and explosion damage are.
